Chocolate Covered Strawberry Cake

To make the strawberry frosting, weve gotta start with the strawberries. Reduced strawberry purée, to be exact!

Start by puréeing some strawberries in a blender or food processor. Then pour the liquid into a saucepan and cook for 15-20 minutes until the purée has reduced from 2 cups to ¾ cup. Not only will this strengthen the strawberry flavour, it will reduce the amount of liquid so it wont ruin the texture of the buttercream.

As with all reduced liquids, I recommend measuring the amount after a few minutes to see if you have the right amount or if you need to continue cooking it down a bit longer. This ensures that you wont over-reduce and end up with less purée than you want.

I suggest doing this part the night before so the purée can chill completely in the refrigerator. You do not want to add hot strawberry purée to the frosting or you may end up with a soupy texture. And since the purée only gives the frosting a very light and pale pink colour, you can add a few drops of pink gel colour for a more vibrant appearance.

How To Make Chocolate Cake

This chocolate should be used as a base for all your chocolate cakes. Its rich but not overly rich. Itll certainly be a favorite. Its soft, moist, decadent, and full of chocolate flavor. Hot coffee helps enrich the flavor of the chocolate but if you dont have any, using hot water will do just fine. Youll still have a fantastic chocolate cake.

Before starting, preheat oven to 350F and grease three 8-in baking pan. Set them aside. This cake is very simple to make. Just combine all your wet ingredients except the coffee in one bowl and then in another bowl, combine the dry ingredients . Then slowly combine dry ingredients into the wet ingredients and stir until blended. Last, stir in thecup of coffee. Split the batter evenly into pans and bake for 20-25 mins or until a toothpick comes out clean.

About The Equipment Needed To Make This Chocolate Layer Cake

9 inch round cake pans You will need three of these.

10 inch round cake board You will want one 10 inch road cake board. A second one is useful for levelling the cakes.

1 large piping bag with a star tip If you dont already have this piping on hand, I would recommend this Wilton Decorating Tip Set.

1 squeeze bottle To help create the chocolate ganache drips.

Plus you will want a wire rack, an offset spatula, mixing bowls, and an electric mixer.

For The Chocolate Ganache Drip:

While the cake chills prepare the chocolate ganache by pouring it into an icing piping bag fitted with a small circular tip. The chocolate ganache should be cooled but still come easily out of the icing bag. Once chilled, remove the cake from the fridge.

Go around the top edges of the cake and squeeze the chocolate ganache so it starts to drip down the sides of the cake. A good tip is to space out your drips about every inch. If at first it doesnt look like it will be a long enough drip, wait a few minutes. The ganache will continue to drip down the sides of the cake. Also squeeze ganache around the top of the cake and smooth it out slightly with a clean frosting spatula. As it sits the ganache will smooth out and come together to form a beautiful finish on top of the cake.Place the cake back in the fridge for 30 minutes to an hour to let the ganache harden up a bit.

The strawberry filling really provides such a nice flavor to the cake. In a medium saucepan, combine sugar, diced strawberries, lemon juice, water, and cornstarch. Allow to simmer for about 10 minutes. Your mixture will start to thicken and darken in color going from a light red to a deep red. Stir occasionally as it simmers. Pour into an airtight container and allow it to cool.

Butter Its a buttercream frosting, so you need butter. You can use salted butter if that is what you have on hand.

Powdered sugar Icing sugar or confectioners sugar works.

Cream Heavy whipping cream will give you the best results but you can even use milk here.

Cocoa powder Unsweetened cocoa powder, not hot chocolate mix.

Espresso You can substitute regular instant coffee, preferably a dark roast, however it wont have the same rich taste.

First, the cake layers will be so much easier to frost if they are cold. Stick them in the freezer while you make the frosting.

Use 1 cup of frosting in each cake layer. Use an offset spatula to smooth the frosting down.

To avoid crumbs getting into the frosting, apply a very light layer of frosting over the cake. Then, freeze for 15 minutes to lock the crumbs in.

Then, you can frost the rest of the cake.

How To Make A Chocolate Covered Strawberry Cake

For this Strawberry Cake recipe, I baked three 8 inch cake layers.

While assembling the cake, I glazed each interior layer with a thin layer of ganache, followed by a layer of strawberry buttercream. I also snipped the tip off of a disposable piping bag filled with strawberry buttercream to create a dam.

I did not take my dam all the way to the edge. The dam is optional, but I was worried that juices from the sliced strawberries would escape.

After spreading a thin layer of ganache, I piped additional strawberry buttercream on top, and gently smoothed over it with my spatula.

Next, strawberry slices! I arranged thinly sliced strawberries on top of the strawberry buttercream. This gives us an additional strawberry flavor boost!

After adding the third cake layer, I frosted my tier with strawberry buttercream, smoothed the sides with a bench scraper, and then used a thin tapered spatula to add ridges.

The easiest way to not only frost a cake but also to add ridges like this is to place the cake on a turntable and so you can spin your tier as your work.

I used very little pressure when adding ridges so that it wouldnt disrupt the flow of our ganache drizzle.

Baked with coconut flour this cake is fairly easy to make. I used just one 8-inch spring form cake tin and cut the sponge in half, purely to keep the carbs low. For a real show stopper of a cake, double up the sponge cake mixture and bake it in two cake tins.

The cake itself is flavored with a combination of ground freeze dried strawberries and a fresh strawberry purée reduction. By puréeing the fresh strawberries and reducing them, less liquid is added to the cake. I first saw this concept from the talented Sally over at Sally’s Baking Addiction. Too much liquid from the strawberries can cause the cake to be gummy and dense, as the first round of this cake recipe testing proved. By reducing the strawberries into a thick paste though, you get all the flavor of fresh strawberries while not sacrificing the cake’s texture. The addition of freeze dried strawberries just intensifies the strawberry flavor. The result is a fluffy, moist and delicious strawberry cake.

    The cake gets frosted and filled with strawberry cream cheese frosting, that again uses ground freeze dried strawberries. The cake also get’s filled with a layer of chocolate ganache and is finished with a ganache drip.   • Prepare the strawberries. Wash and dry the strawberries very well. The strawberries have to be really dry or else the chocolate will not stick on. They have to be SUPER dry.
  • Melt the chocolate. You can melt the chocolate either on the stove or in the microwave.
  • On the stove: Bring 2 inches of water to a low simmer in a saucepan over medium-low heat. Then turn the heat to low and place a large heatproof bowl of chocolate chips on the mouth of the pot.   • Add toppings. Use a piping bag and round tip to drizzle the remaining chocolate on top. You can also add sprinkles or coat the chocolate with crushed nuts.
  • Chill. Place the baking sheet in the refrigerator and chill for 30 minutes until the chocolate is set.

  • Add semi-sweet chocolate chips to a small microwavable bowl. In another small microwavable bowl, heat the heavy cream to a light simmer for about 1 minute.

    • Tips for the drizzle: If youre adding the chocolate drizzle be sure to place the cake in the fridge after frosting it and before adding the drizzle. This will allow the chocolate to set properly on top.
