Chocolate Sour Cream Cake Recipe

Pre-heat oven to 350 F. Grease and dust a 10×5 inch loaf pan with butter/oil and flour.

On a medium bowl mix flour, cocoa powder, baking soda and salt these will be your dry ingredients. Set aside.

Over a large mixing bowl, cream on medium-high speed the unsalted butter and sugar for 2 minutes until light and fluffy. Beat in eggs, one by one. Add vanilla and mix.

Turn to low speed. Start adding the dry ingredients to the wet ingredients in small amounts, alternating with sour cream, starting and finishing with flour mixture. Scrape with a rubber spatula the bottom and sides of the bowl and mix. Add hot coffee and mix until everything is well combined, but do not over mix.

Pour batter into the prepared pan and bake for 45-50 minutes, or until a toothpick inserted in the middle comes out with just a few crumbs. Let cool for 15 minutes, then carefully, remove from the pan and let cake cool completely over a wire rack.

You will have to work quickly before the ganache hardens. Spread it on top of the cooled cake, making waves with the back of a spoon. Serve with a scoop of vanilla ice cream, or just plain.

The best way to store pound cake is to seal it in an airtight container and leave it at room temperature in a relatively cool part of your kitchen. It is possible to store it in the fridge to extend the shelf-life, however the chilly environment can lead the cake to dry out more quickly.

  • Make filling. Whip heavy cream till thick, then fold in 1 cup of the chocolate sour cream frosting.
  • Assemble cake. Place one cake layer on plate or stand and cover with half of whipped chocolate filling. Repeat with remaining cake layers. Frost with the rest of the chocolate sour cream icing.

  • Know your bundt pan size. Not sure which one you have? Use a measuring cup, fill it with water and pour it into the bundt pan. Keep going until the water is level with the top of the pan, keeping a tally of the number of cups used. Picking the right size pan for what the recipe recommends is important. Too small and the batter will overflow.
  • Prep the pan at the correct time: In the next step I recommend how to prepare your pan but timing is important too. Dont prep the pan when you preheat the oven. Do it once the batter is made, just before filling the pan. If you do it too early, the grease can pool in the bottom of the pan.
  • Grease the pan: Using a pastry brush, grease every nook of the pan with cake-release oil, baking spray, or softened butter . Grease it generously.
  • Dust the pan. Dust in cocoa powder or a combination of cocoa powder and sugar. Knock out any excess. The sugar leaves a light crust on the outside which I quite like but does leave whiteness. Mixing it with cocoa powder means you have that beautiful dark appearance too.
  • Lightly tap out the air bubbles: Once the batter is poured into the pan- lightly tap the pan on the countertop. This helps any air bubbles rise from the base of the cake, which when baked and flipped will be the top.
  • Loosen the cake gently: Once baked, remove the pan from the oven. Use a mini rubber spatula to gently run it between the cake and pan as carefully as you can.

    • 1 cup butter, softened- I used unsalted butter
    • 3 cups granulated sugar

    • 3/4 cup unsweetened cocoa powder
    • 3 teaspoons baking soda
    • 1 1/3 cups sour cream
    • 1 1/3 cup boiling water or hot coffee! Coffee works well for this recipe!

    For the frosting, you will need:

    • 3 ounces unsweetened baking chocolate, chopped
    • 3 ounces semi-sweet baking chocolate, chopped
    • 5 cups powdered sugar
    • 1 teaspoon vanilla extract
