Chocolate Chip Ice Cream Sandwich Bars
Whats the biggest challenge with homemade ice cream sandwiches? The sandwich part is frozen too solid to bite while the ice cream is too soft to hold its shape. Well, not with these treats! The chocolate chip cookie bars stay beautifully soft even when frozen. And thanks to our all-in-one freezing technique, the no-churn homemade ice cream inside remains stable and drip-free bite after delicious bite.
- 8 tablespoons unsalted butter
- 1 1/4 cups light brown sugar or dark brown sugar, packed
- 3/4 teaspoon salt
- 1 3/4 cups King Arthur Unbleached All-Purpose Flour
- 1 1/2 teaspoons baking powder
- 1/3 cup mini chocolate chips
- 2 cups heavy cream or whipping cream
- 14-ounce can sweetened condensed milk
- 2/3 cup semisweet chocolate or bittersweet chocolate, melted, optional
Preheat the oven to 350°F. Line a 13 x 18 rimmed baking sheet with parchment and lightly grease the parchment.
To make the bars: Melt the butter and whisk in the brown sugar. Add the salt and vanilla, stirring until smooth.
If the mixture is uncomfortably hot to the touch, allow it to cool a bit before adding the eggs all at once. Whisk until smooth.
Stir in the flour and baking powder.
Bake the bars for 15 to 18 minutes, until theyre set in the middle and just starting to turn golden brown. Remove from the oven and cool completely before assembling the sandwiches.

How To Make A Chipwich
- Place a sheet pan or freezer-safe container in the freezer so you can place the chipwiches in the freezer as you make them.
- Place the chocolate chips in a shallow bowl and line a baking sheet with parchment paper. Place the cookies upside down on the baking sheet.
- Top a cookie with a ¼ cup of ice cream, and then place another cookie on top. Roll the sandwich in the chocolate chips, so they stick to the ice cream around the edges. Place the ice cream sandwich on the baking sheet in the freezer.
- Repeat this process with the rest of the cookies you can work in batches of two or three until all of the sandwiches are assembled.
- Freeze the chipwich ice cream sandwiches for a few hours or until the ice cream is firm.
Assembling & Freezing Your Cookie Ice Cream Sandwiches
After all of the cookies cool completely, you can assemble your ice cream sandwiches. Theres no need to soften your ice cream prior to starting this step, though if your ice cream is particularly hard to scoop, give it a couple minutes to slightly soften.
Flip a cooled cookie over and place 1 generous ice cream scoop, about 1/4 cup or 45g, on top. Use your scoop to gently spread the ice cream to the edges. Sandwich a cookie on top, then pick up the assembled sandwich and gently press it all together in the very center to make a compact sandwich.
And I mean a VERY gentle press because if you press too hard, the cookies could break.
Roll the edges in mini chocolate chips, sprinkles, or even finely chopped nuts. This little extra is not only tasty, its actually functional because it holds the ice cream in place.
You can enjoy the cookie sandwiches immediately, but I recommend freezing to set their shape.

Assemble The Ice Cream Sandwiches
Sandwich Ice Cream Between Cookies: Grab a cookie and add about 1/4 cup of ice cream on top. Spread the ice cream out evenly. I used the back of a spoon to spread it around. I find it easiest to work with the ice cream when its right out of the freezer and still firm. The more it melts, the more it melts out from between the cookies when you return them to the freezer. Work quickly. Top the ice cream with a second cookie and place the cookie sandwich back into the freezer.
Freeze Chipwiches: Continue to work with the cookies and ice cream until youve made all of the ice cream sandwiches. Allow them to freeze for 2-3 hours so that the ice cream is fully frozen.
Dip Into Additional Chocolate Chips: Dip the sides of the ice cream sandwiches into the additional mini chocolate chips to coat the edge of the ice cream. I like to spread the chips out onto a plate and roll the ice cream through them.
Enjoy! Put the finished cookie sandwiches back into the freezer until youre ready to serve them.
Success Tip: Use Mini Chocolate Chips
Mini chocolate chips are perfect for frozen cookie ice cream sandwiches. When frozen, the smaller chips arent as rock hard as the regular-size chocolate chips. Theyre simply easier to eat, plus you can enjoy more chocolate in every single bite when you use smaller chips.

Form The Cookie Ice Cream Sandwiches
Place a large baking sheet in the freezer so it is completely flat with enough room for the ice cream sandwiches.
Once the cookies are cooled, remove ice cream from the freezer and let it soften at room temperature for 3-5 minutes until it is easy to scoop but still frozen. Do NOT let it thaw too much or the ice cream will leak out of the cookies before the sandwiches are fully frozen when transferred to the freezer.
Use a ¼ cup measuring cup or cookie scoop to measure ¼ cup ice cream, place it on the cookie with the bottom facing up. Then, put the second cookie on top and press them together so the ice cream is evenly distributed in the center.
If desired, press mini chocolate chips into the ice cream along the edges of the sandwich.

I really wanted the salted caramel flavor. But since this was out of stock I settled for the Tillamook Vanilla Bean Ice Cream Sandwich. I love the standard Tillamook vanilla ice cream, and figured this couldnt be any different for the ice cream sandwiches.
I had seen this product on the shelf for awhile, but always held off due to the price. I love Tillamook products, but I wasnt going to pay up to $5.49 for four small ice cream sandwiches. Not when, I could track down a Ruby Jewel instead.

You can choose to add sprinkles or mini chocolate chips, but its completely optional. I like the idea of swapping out the sprinkle colors for different occasions. But I have to admit, I have always been partial to rainbow sprinkles!
