If you prefer a crunchy chocolate chip cookie, no problem. The cookie pictured on the right on this plate above is the crunchy cookie. All you have to do is leave out the liquid Allulose and replace it with more of the Better than Sugar Confectioners sweetener.

As you can see from the photo above of the different shaped cookies, the very flat one was using just ½ cup of confectioners and ½ cup of liquid Allulose which obviously did not yield the best shape and it was very soft.

How to make Sugar Free Chocolate Chocolate Chip Cookies

  • Preheat your oven to 325 and line a baking sheet with parchment paper .
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and unsweetened cocoa powder. Set this bowl aside while you continue.

For the texture, its best to play around with the baking time. For a cookie with a soft, gooey center, I recommend taking them out of the oven around 16 minutes. For a crispier cookie with a cakey texture, leave them in for 19 minutes.

When shaping the cookies, I find that an ice cream scoop or tablespoon works well to measure out each cookie. Then, I use my palm or a fork to press them down into a round cookie shape.

Yes you can use any sugar substitutes you’d like in this recipe, but I’ve found that different types will yield different results. I used Better than Sugar and think it provides the best results because it makes this delicious recipe taste like the real thing!

Monk fruit is another great option as well as pure erythritol, like the Swerve brand. I have not used a brown sugar blend but that might work as well.

Sugar

Salted Butter– softened is best as it will be easier to incorporate the remaining ingredients together. I use salted butter because then you don’t need to add any salt to balance the sweet flavors.

Better than Sugar is a low-carb sweetener that I use often in many baking recipes. The reason is that it combined erythritol and stevia for a perfect amount of sweetness similar to using sugar. I am using the confectioners’ or powdered version for these sugar free cookies.

Allulose– in liquid form is best if you want a chewy chocolate chip cookie. If not please read below for crunchy keto cookies.

Large Egg– room temperature is best as again it will help incorporate all ingredients together quickly and smoothly.

Vanilla Extract– I add vanilla extract to pretty much all my baking recipes. You just can’t replicate that warm flavor with any other ingredient.

Sunflower Seed Flour– Is my choice for a tree nut free cookie that is easy to swap with almond flour than any other keto flours I’ve used, like sesame or coconut.

Baking Powder-I have tried using baking soda for these cookies and they expanded and flattened too much, not to my liking anyway. Baking powder is what works for best results.

Xanthan Gum– is used in many gluten free recipes to help with a chewy texture and help not be as crumbly. You could leave it out if you really don’t want to use it but the cookies could become crumbly so please wait until cooled completely before enjoying.

Growing up, whenever wed go to my grandparents house there would be two sections of treats in the cabinet.

One was the regular, full-of-fat-and-sugar junk food section specifically for us kids. The other was comprised of sugar-free JELL-O, granola bars, and low carb cookies for my grandfather who had Diabetes.

I must say that since posting this recipe years ago, there has been kind of an explosion in sugar free, or even keto, baking. Unlike today, one time there was just one kind of sugar free chocolate chip available.

I suggest using a chocolate chip that contains the sugar alternative that you prefer most.Also, that chocolate chip should be suitable for baking with as well.

How To Make Sugar

These cookies are so easy to whip up, you can make them any time youre craving a little something sweet!

Step 1: Preheat your oven to 325F and line a baking tray with baking paper.

Step 2: Add the erythritol to a high-speed blender and process until powdered. If the sweetener is already powdered, you can skip this step.

Step 3: In a large bowl, mix together the butter and powdered sweetener until the sweetener is almost completely dissolved.

Step 4: Add in the ground flax, water, baking soda, and almond flour. Stir until well-combined.

Step 5: Gently fold in the chocolate chips until they are evenly distributed throughout the dough.

Step 6: Using about 1 tbsp of dough at a time, form the dough into cookies and place on a baking tray lined with parchment paper. You should end up with 8 cookies.

Step 7: Bake for 15-20 minutes at 325F until they just start to brown and become golden.

Step 8: Remove from the oven and allow to cool for 10 minutes on the baking tray.

Spet 9: Gently transfer from the baking tray to a cooling rack and allow to cool for another 10 minutes.

Thats it! Your homemade, delicious, guilt-free cookies are ready to enjoy.

How To Make Giant Chewy Keto Chocolate Chip Cookies:

Add the butter and sugar to a stand mixer and beat until combined and fluffy .

Use a rubber spatula to scrape the sides of the bowl and beat in the egg and vanilla extract.

Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat on high speed until everything is incorporated and a sticky dough forms. Beat in the chocolate chips.

Use the rubber spatula to scrape the sides and bottom of the bowl again to ensure all of the ingredients are mixed together very well. Refrigerate the dough for at least 1 hour before baking.

When youre ready to bake, preheat the oven to 350 degrees F and line a large cookie sheet with parchment paper.

Measure out cup of the dough and place it on the baking sheet. You can also use a cookie scoop if you own one. Repeat for remaining cookie dough . Note that the dough will spread during the baking process so be sure to leave ample room between balls of dough.

Bake for 11 to 15 minutes, or until the cookies reach your preferred level of done-ness. Chewy cookies will need 10 to 11 minutes on the dot and crispier cookies will require 13 to 15.

Remove cookies from the oven and allow them to cool for a few minutes before transferring them to a wire rack and digging in! If you go after them right away, they will fall apart easily, so for best results, wait for at least 15 minutes before diving in.

  • An extra egg yolk: Adding an extra yolk gives the cookies both a higher fat and higher moisture content, which helps create a softer, chewier cookie.
  • Avoid over-mixing the batter: Dont over-mix once you add the flour. Once you add the dry ingredients, only mix until the dough comes together and the dry ingredients disappear.
  • Dont over-cream the butter and sugar: Taking the time to cream together the butter and sugar is important. However, if you over-beat them, youll incorporate too much air and youll end up with cakey cookies.

Carbalose flour is a low-carb flour that is made using a process that results in enzyme-modified wheat. It is low in carbs and high in fibre, which makes it a great option for diabetics.

Carblose flour can be used in most baking recipes and is also great for breading and frying recipes.

Carbalose flour is used in a 1-to-1 ratio with All-purpose flour, which makes it a super easy substitute.

Carbalose flour is heavier and denser than regular all-purpose flour. I always put it through a sieve or sifter before baking with it, to lighten it up a bit. It does not go through a sifter well if the sifter is a double-screened sifter. In this sugar free chocolate chip cookie recipe, I used a sieve to sift the flour.

Carbalose Flour tastes similar to all-purpose flour. It is not grainy or gritting like Almond Flour or other types of ground nut flour.

Since Carbalose flour is denser than regular all-purpose flour when making bread add extra yeast, or use a combination of half all-purpose flour and half Carbalose. Getting Carbalose flour to rise to a fluffy bread is not usually successful.
