No Bake Peanut Butter Bars
The cold air is what is setting these up so you can pick them up in a bar or square shape. If you leave them out it will warm and at room temperature it will look like it did when you mixed it in your bowl. That is why you need to keep them in the cold always.
If you are looking for a few healthy snacks for your kids, ours have enjoyed these a lot. Beyond chocolate chips and peanut bars we have made this haystacks recipe during the holidays. Our no bake pumpkin cheesecake treats with crushed cereal and a sprinkle of brown sugar on top are killer too.
Chocolate chips and peanut butter are also used to make scotcheroos. That requires a bit of boiling the setting ingredients but doesnt need the heat of an oven either. The easiest favorite treat of ours is probably cake mix brownies, give those a whirl too.

Substitutions For No Bake Chocolate Peanut Butter
- Peanut butter almond butter, cashew butter, sunflower butter, Granola Butter, or tahini
- Coconut oil coconut butter or unsalted dairy butter
- Chopped nuts seeds, cacao nibs, puffed quinoa or something else that is crunchy.
- Dark chocolate chips semi-sweet chocolate chips. Look for dairy-free brands if necessary or ones sweetened with stevia if that works better for you.

These peanut butter bars are so irresistible. The recipe makes a big pan full, but its one of those things that you cant stop eating, and you keep going back for another little piece, and then another, and then another. Oh, is that just me?
I got this peanut butter oatmeal bar recipe from Nates aunt. She made them a while back for a family party and I wont tell you how many of these bars I ate that night. But I figured I should get the recipe so that I could make them again and home, and so that I could share the recipe with you.
These bars start with a peanut butter oatmeal cookie base. Its spread out thin into a rimmed cookie sheet. Youll bake them until the edges just start to turn golden and the middle is no longer doughey. They keep cooking as the pan is cooling so you dont need to worry about if they look a little underbaked right when you pull them out that way the edges wont be too dry and overdone.
While the bars are still warm, youll dollop peanut butter all over the top and spread it smooth all around to give the bars that perfect extra peanut buttery taste.
Theyre then topped with a super easy, buttery chocolate frosting that brings it all together, just right.
These bars are chewy, soft, sweet and so delicious. And the perfect chocolate and peanut butter dessert. Everyone you share them with will LOVE them, that is, if you have enough leftover to share after you eat half the pan.
Start With The Oatmeal Cookie
I based this layer off of my moms oatmeal cookies, but made things less sweet. Just some oats, almond flour, and maple syrup with eggs and vanilla.
I also used coconut oil in place of vegetable oil, something Ive been doing for years.
Then, just bake the cookies until set. They taste buttery and perfectly sweet, but with no butter or sugar!

No Bake Chocolate Peanut Butter Oatmeal Bars Ingredients
Natural Peanut Butter. You cant have a peanut butter dessert without it! Feel free to use traditional peanut butter if you dont have the natural variety.
Honey. To sweeten the peanut butter layer just a little bit!
Rolled Oats. These make the bottom layer nice and chewy. I used large flake rolled oats but quick cooking oats will do just fine.
Semi-Sweet Chocolate Chips. We will melt these to create the top layer for the bars.
Refined Coconut Oil. You just need 1 tbsp to mix in to the chocolate chips before melting. This helps them melt into a smooth, creamy consistency and adds a touch of richness.
Flaky Sea Salt. This is for sprinkling on top and is totally optional.
Notes About The Ingredients
The crust is based on rolled oats. If you want to make gluten-free oatmeal bars, this is the ingredient to look out for, so opt for certified GF oats.
Make sure you go for creamy peanut butter, not crunchy peanut butter as this won’t allow you to get a nice smooth caramel layer. Some peanut butter has added oils and sugars, so avoid these if you don’t want the recipe to be as sweet.
You can use vegan milk chocolate or dark chocolate depending on your taste. If you want to keep the recipe refined sugar-free, go for a naturally sweetened dairy-free chocolate. You can also make your own vegan milk chocolate with coconut sugar and melt it for the topping.

What Kind Of Oats Should I Use
For this recipe, old-fashioned rolled oats are best. They will absorb the butter and sugar mixture well and still maintain the texture you want when they harden after refrigeration. Steel-cut oats are not good as they will be too hard and not soften for this, and instant oatmeal is too powdery and won’t hold the texture you want in these bars.

Mixing Bowl To Oven In 10 Minutes
After you mash the bananas, beat in the rest of the ingredients. This is a 1 bowl recipe! If you dont have a mixer, you can mash the bananas with a fork, then just stir in the rest of the ingredients. Line a 9×9-inch baking pan with parchment paper, then spread the batter into the lined pan. Give it a tastethe batter itself is SO DARN GOOD.
The bars take about 2530 minutes to bake. Remove them from the oven, then let them cool completely. I usually cool them on the counter for 30 minutes, then place the whole pan in the refrigerator for 12 hours. Without refrigeration, the bars dont cut as neatly.
Prepare The Oat Mixture
In a bowl, add the rolled oats, peanut butter, and honey and mix well to distribute. The oats should be coated in the peanut butter. This is best done with a rubber spatula or a mixing spoon.
Place a piece of parchment paper in an 8 X 8 pan for easy clean up. This also makes it simple to remove the bars from the pan.
Press the oat mixture into the pan. Use your hands or the back of a spoon to press the mixture down tightly, especially into the corners.

- Dates: I love medjool dates. They have a caramel-like flavor. Always check the inside when you pit them to be sure they have no bugs. I store them in a sealed jar in my pantry or in the fridge or freezer.
- Peanut butter: Im a fan of peanut butter, but you can use any nut or seed butter of choice in this recipe. I always use natural nut butters.
- Coconut oil: I prefer using an unrefined coconut oil. It helps solidify the mixture because coconut oil hardens when refrigerated.
- Vanilla extract: look for pure vanilla extract without additives or artificial flavors.
- Rolled oats: use old-fashioned rolled oats, not steel-cut oats. Look for gluten-free oats, if necessary.
- Shredded coconut: I always have shredded coconut on hand for when I make granola. It adds a nice chew to this base.
- Crunchy element: you can use chopped nuts, seeds, cacao nibs, puffed quinoa, a combination of these or any other crunchy element.
- Chocolate chips: I like dark chocolate chips, but you can use semi-sweet. I wouldnt recommend using milk chocolate chips because they are mostly sugar.
- Flaky salt: is used for finishing dishes. I love adding flaky salt to desserts too. It adds a nice crunch of salt.

Now I love peanut butter and chocolate together, separate and really on anything. But when you take chocolate chips and melt them together with peanut butter, then pour it over chewy oatmeal bars well its just divine, mouthwatering deliciousness.
I have always love this recipe for Chocolate Oatmeal Peanut Butter Bars since my childhood. I have fond memories of camping with family & friends with these babies. My moms friend, Shelia would always make these bars and we counted on her ever camping trip to make the most delicious desserts.
While I love the original recipe, I recently switched out one ingredient for another all for health reasons. I took out the Karo syrup and instead replaced it with a combination of agave nectar and honey. I was a bit worried about this, thinking it just might not work out and it did. Laying out all your ingredients and supplies before starting is important so the oatmeal cookie layer doesn’t cool and harden before it can be pressed into the pan and crumbled on top. Line the baking dish, grease a spatula, etc. before you begin.
Can I Add Other Mix
Yes! While these are pretty basic and easy to make, you can definitely add other ingredients into the bars for a little bit of extra flavor or texture. Below are a few suggestions that pair well with these textures and flavors.
- Crunchy peanut butter in place of creamy.
- Replace the peanut butter with Nutella or cookie butter spread.
- Chopped peanuts, pecans, walnuts, macadamia nuts, or hazelnuts.
- Mix into oatmeal mixture mini chocolate chips, white chocolate chips, peanut butter chips, or cinnamon chips.
- Dried cranberries, chopped dates, raisins, or golden raisins.
- Replace chocolate chips with just peanut butter chips or white chocolate chips.
- Shredded coconut.

Can I freeze these oatmeal peanut butter bars?
Yes, these are a great recipe to freeze! I would suggest wrapping them individually and freeze. For best results, store in a freezer-safe ziploc bag and remove as much air as possible to prevent freezer burn. The bars will stay good for 3-4 months.
Can I make these peanut butter cookie bars vegan?
I havent tried personally, but I dont see why a flax egg wouldnt work for this recipe. Just replace the egg and make sure your chocolate chips are vegan-friendly.
Can I use a different flour besides oat flour?
If you dont have oat flour you can easily make some by grinding up some oats in a food processor or blender! OR you can simply use all-purpose flour, gf flour or almond flour in its place. You could also just use more oats in place of the oat flour. For any substitutions made, it would be gram for gram, an equal amount!
Can I use a different but butter other than peanut butter?
You can! I would suggest using creamy peanut butter here if possible, but you could easily sub for almond butter, cashew butter or sunflower seed butter. Just know that it will change the flavor a little bit.
