One of the most wonderful things about the More Or Less Challenge is that it has pushed me to experiment with more E and dairy-free recipes! This Chocolate Peanut Butter Cookie Oatmeal nails both of those goals and it is so incredibly delicious, that Ive declared it to be my go-to E breakfast from now on!
There are only 6 ingredients in this breakfast, and none of them are special or expensive:
Can I just take a moment here to express how thankful I am that defatted peanut flour is now a common thing? Even in Canada, you can find a sugar-free version locally! My favorite brand is Tru-Nut, but I also use the PB & Me brand which you can find at Wal-Mart. Both of these products feature peanuts as the only ingredient. Of course, Trim Healthy Mama has a superior brand of peanut flour, too, but its not as accessible to me.
Defatted peanut flour is an amazing ingredient. Its the result of peanuts being processed into a flour after the fat has been removed. When mixed with a wet, low-fat ingredient like 0% Greek yogurt, water, or a nut milk, it provides the same peanut butter flavor, but with a much more concentrated level of protein. Since defatted peanut flour is so low in fat and high in protein, its an ideal ingredient for Trim Healthy Mama-friendly Fuel Pull and E meals.
You can enjoy it with a glass of low-fat kefir for more even protein.
Can I Add Anything Else To This Simple Recipe
I think these cookies have the perfect amount of sweet flavors and chewy texture. However, there are quite a few things you can switch up or add to really make them your own! Here are just a few ideas
- Add chopped peanuts for additional peanut taste and a delightful crunch. However, you may need to add a little bit more butter and milk to keep the consistency just right.
- Make these no bake cookies vegan by swapping out the regular dairy milk for a plant based alternative, like almond or oat milk.
- If you want to make these cookies even sweeter, try adding a tablespoon of dark brown sugar to the mix! Of course, you could always add an extra splash of vanilla extract as well.
- Salted or unsalted butter both work well in this recipe, its really just up to what you prefer. Salted butter gives the sweet ingredients a nice balance of salty and sweet, while unsalted butter goes pretty undetected and helps only with the consistency, not the flavor of the cookies.

Tips For Making The Best Peanut Butter Oatmeal Cookies:
- Like most oatmeal cookie recipes, youll want to press the cookie dough balls down slightly so they flatten and become chewy otherwise you may end up with high, round baked cookie balls. Once youve baked a pan, you can get a better sense for how much to press them before baking, depending on whether you like them thicker or thinner.
- You can swap the chocolate chips for Reeses pieces, dark chocolate chunks, white chocolate chips, butterscotch chips, or a combination for a totally new spin on these peanut butter oatmeal cookies!
- Do not use natural peanut butter in this recipe your regular old jar of creamy peanut butter is what you want.
- Give them some space to spread, a couple of inches is enough. Otherwise you may end up with cookie bars!
- Let them set on the pan for 5-10 minutes before removing them to a plate, wire rack, or piece of wax paper to cool completely. This will give them a chance to finish cooking on the hot pan because I always recommend removing them from the oven when they are still just a bit glossy in the center.
Can You Use Old Fashioned Oats In No Bake Cookies
I use quick oats when making no bake cookies as I think that they result in the best texture in the finished cookie.
But if old fashioned oats are what you have in your cupboard, they can be used in no bake cookies as well. The cookie will just be a little chewier since old fashioned oats are bigger and thicker than quick oats.

Can You Put No Bake Cookies In The Fridge To Harden
You shouldn’t need to put your no bake cookies in the fridge to firm up. They will do that on their own within about 20-30 minutes of dropping the cookies onto a cookie sheet as the oats soak up additional moisture and the chocolate peanut butter mixture cools.
Sticking the still-warm cookies into the fridge to speed up the process can actually affect the cookies negatively by resulting in setting the chocolate portion before the oats have a chance to absorb moisture, which changes the end texture of the cookies.
BUT, if for some reason your cookies don’t set up after 20-30 minutes, you can stick them in the fridge at that point and everything will turn out fine.
Are No Bake Cookies Healthy
Were always looking for a healthy dessert, arent we? The truth here is that while these cookies ARE still cookies, theyre definitely on the healthier side of the dessert realm. Made with healthful ingredients, these no bake cookies are definitely a healthier treat to keep on hand. Why Are My No Bake Cookies Sticky/gooey Or Dry/crumbly
If your no bake cookies are sticky and gooey, then they were not boiled quite long enough.
On the flip side, if your no bake cookies are dry and crumbly, they were boiled a tad too long. You should let the mixture come to a full rolling boil and then time exactly 1 minute from there.
However, some stoves run hotter or cooler, and things like humidity or kitchen temperature can play a role in how they set, so there may be some trial and error involved as you gauge the exact boiling time for your kitchen.

Boil. Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute.
Stir. Remove from the heat once it boils for a minute. Then add the oats, peanut butter, vanilla and salt, and stir to combine.
Cool. Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes.

How To Make Peanut Butter Oatmeal Chocolate Chip Cookies
These cookies are easy to make and you dont have to chill the dough. Mix, bake, and EAT!
- Preheat the oven and get your baking sheets ready!
- In a medium bowl, whisk together the dry ingredients.
- In the bowl of a stand mixer, beat together the butter and sugars until creamy.
- Add in the eggs and vanilla extract and mix until well combined.
- With the mixer off, add the dry ingredients. Mix on low until just combined, dont over mix.
- Stir in the oats, chocolate chips, peanut butter chips, and coconut.
- Use a cookie scoop or spoon to scoop the cookie dough onto the prepared baking sheet, about 3 tablespoons of dough per cookie. I like to make these cookies bigger! Leave about 2-inches between each cookie because they will spread as they bake.
- Bake for 10 to 12 minutes or until slightly golden brown around the edges but still soft in the center. Dont over bake.
- Remove from the oven and sprinkle with the tops of the cookies with a little sea salt. Let the cookies cool on the baking sheet for 5 minutes or until set.

After you prepare the peanut butter oatmeal chocolate chip cookies dough, chill it for 20 minutes in the refrigerator. After chilling, its time to scoop the dough and bake the cookies. Each cookie uses 2 Tablespoons of dough which is about the same size as these regular chocolate chip cookies. Arrange the cookie dough balls 3 inches apart on your baking sheet. Quick Tips Before You Start
Kerrygold is my go-to butter for baking. It makes tasty baked goods but like all butter, it can lead to cookie dough thats prone to spreading out. To avoid this, I chill my cookie dough one to two hoursor overnight if I have the patience.
Feeling fancy? Use vanilla beans instead of vanilla extract. Although its more expensive, the difference in flavor is real. One whole vanilla bean equals about 3 teaspoons of extract, so you can cut the pod, scrape out what you need and stash the rest for later use.

Yes, my no bake chocolate peanut butter cookies are great for freezing. Allow the cookies to cool completely then place them in a container suitable for the freezer, placing a sheet of wax paper between the layers of cookies to stop them sticking together.
These cookies will store for up to 3 months in the freezer. When ready to eat, remove them from the freezer and allow them to defrost at room temperature.

Choosing The Right Ingredients: Best Peanut Butter To Use
Peanut butter. Though natural-style peanut butter is my #1 choice for eating and snacking, I recommend using non-natural peanut butter for this particular cookie recipe. Natural peanut butter can be used in my regular peanut butter cookies , but its not ideal for todays recipe. Instead, use Jif or Skippy. You can use creamy or crunchy, but I prefer creamy peanut butter as crunchy can make the cookies taste a little dry. You need 1 cup of peanut butter for this recipe.
Room temperature butter. Like my basic soft chocolate chip cookies, the base of todays oatmeal cookie recipe is creamed room temperature butter, granulated sugar, and brown sugar. You cant cream butter and sugar together if the butter is too warm or too cold. Room temperature butter is about 65°F . Its cool and slightly firm to touch, not warm or slippery. I recommend placing your butter on the counter for 1 hour prior to beginning the recipe to achieve ideal room temperature butter. If you dont have an hour, here is my trick to soften butter quickly. You need 1 cup of butter for this cookie dough.
How To Store Peanut Butter Oatmeal Chocolate Chip Cookies:
These cookies can be store in an airtight container at room temperature for 3-4 days, but I can guarantee you they wont last long if theyre within arms reach!
They can also be frozen for 3 months if you are doubting your self-control, but Ill warn you they are fantastic right out of the freezer, too!

Milk Chocolate Chunk Peanut Butter
We’ve taken a traditional oatmeal cookie, and dressed it up with a popular flavor combination: chocolate/peanut butter. Sweet, smooth milk chocolate is the perfect flavor match for the salty, chunky peanut butter in this chewy/crunchy cookie.
- 1/2 cup light brown sugar or dark brown sugar, packed
- 1/4 cup granulated sugar
- 2/3 cup peanut butter, chunky preferred
- 4 tablespoons unsalted butter, softened
- 1/2 teaspoon salt
Preheat the oven to 350°F. Lightly grease two baking sheets.
Combine the sugars, peanut butter, butter, salt, baking soda, and vanilla, beating until smooth.
Add the egg, beating to combine.
Stir in the oats and flour, then the milk and chocolate chunks.
Drop the dough by the tablespoonful onto the prepared baking sheets, leaving about 1 1/2″ between them. A tablespoon cookie scoop works well here.
Bake the cookies for about 12 to 14 minutes, until they’re a medium golden brown.
Remove the cookies from the oven, and transfer them to a rack to cool.
