  • How To Make The Best Keto Chocolate Chip Cookies

First, you add your almond flour, egg, cream, butter, vanilla extract and granulated sweetener into a bowl.

You can use coconut oil if you want a dairy free keto dessert!

To my UK readers – if you use ground almonds, add an extra couple of tablespoons as ground almonds tend to be coarser than almond flour.

You can mix everything with a fork in a large bowl – it comes together really easily. Let the batter sit for a few minutes to let the flour absorb the moisture.

Now, chop your chocolate. Any chocolate with a cocoa solids content of 85% and above is fine. I like using 90% Lindt.

Another alternative is using sugar-free chocolate chips. Lily’s stevia sweetened dark chocolate chips, Lakanto or Choczero are popular in the US.

Fold the chopped chocolate into the cookie batter. Now’s a good moment for a little taste – adjust your sweetener if you wish

Roll the batter into little cookie dough balls and place on a baking sheet. The dough will still be a tad soft and sticky.

TIP: Use baking/parchment paper to prevent the cookies from sticking. I had run out, so I greased the tray with butter.

Flatten your low carb chocolate chip cookies with your hand. They should be about ½ centimetres thick. Then bake in the oven for around 13 minutes.

    Choosing Ingredients For Sugar

  • Use only a powdered sweetener in this recipe the cookies will get firmer.
  • You can use any granulated sweetener like xylitol, granulated stevia, or erythritol that is a 1:1 replacement for sugar then, put it into a food processor so it will become a powdered consistency.
  • I dont recommend using liquid stevia it may become too dry or make them too fragile.

How To Make Dark Chocolate Chip Muesli Cookies

This is a pretty easy cookie recipe. Just mix the ingredients, scoop onto baking sheets, and throw them in the oven!

Step 1: Preheat the oven to 375°F. Lightly grease 2 baking sheets.

Step 2: In a medium bowl, whisk together the flour, baking soda, and salt, then set aside.

Step 3: Blend the applesauce, brown sugar, and vanilla extract with an electric mixer until smooth. Add the egg and mix well.

Step 4: ¼ of a cup at a time, add the flour mixture to the applesauce mixture, blending well after each addition.

Step 5: Fold in the muesli and dark chocolate chips.

Step 6: Scoop a tablespoon of the dough at a time and drop it onto the prepared baking sheet. You should get about 15 cookies per pan.

Step 7: Place in the oven and bake for 6 minutes.

Step 8: Rotate the pans top-to-bottom and front-to-back, then bake for another 5 to 6 minutes.

Step 9: Remove the cookies from the oven and let them cool on the pans for 5 minutes.

Step 10: Transfer the cookies to a wire rack to cool completely.

The cooling process is very important for the texture of these cookies. But if you just cant resist and have to try one hot out of the oven, I wont blame you!

Ingredients For Keto Chocolate Chip Cookies:

Unsalted Butter: The ingredient that makes a cookie utterly irresistible Butter serves as the fat, flavor, and goo portion of the recipe. It can easily be replaced with softened coconut oil for those who are dairy-free. I often find cookies made with coconut oil are equally delicious as those made with butter!

Sugar-Free Brown Sugar: The sweetener portion of the recipe. Sugar-free brown sugar adds richness to the cookies and works with the butter to create that scintillating goo. My favorite brands of sugar-free brown sugar are Lakanto monk fruit sweetener and Swerve.

If you dont have a brown sugar substitute on hand, no sweat! You can easily replace it with any granulated sugar-free sugar substitutes. On the flip side, if you dont follow a low-carb diet, feel free to swap out the sugar-free sweetener for regular brown sugar, cane sugar, or coconut sugar.

Egg: One egg helps fluff up the cookies and keep them held together. I try to bring my egg to room temperature before adding it to the cookie dough so that it plays nice with the softened butter and doesnt cause any clumping.

Vanilla Extract: Providing warmth and richness, a touch of vanilla extract helps add an aromatic yumminess to any cookie. How to describe it in words? Lovelyoptional but also mandatory.

How To Make Giant Chewy Keto Chocolate Chip Cookies:

Add the butter and sugar to a stand mixer and beat until combined and fluffy .

Use a rubber spatula to scrape the sides of the bowl and beat in the egg and vanilla extract.

Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat on high speed until everything is incorporated and a sticky dough forms. Beat in the chocolate chips.

Use the rubber spatula to scrape the sides and bottom of the bowl again to ensure all of the ingredients are mixed together very well. Refrigerate the dough for at least 1 hour before baking.

When youre ready to bake, preheat the oven to 350 degrees F and line a large cookie sheet with parchment paper.

Measure out cup of the dough and place it on the baking sheet. You can also use a cookie scoop if you own one. Repeat for remaining cookie dough . Note that the dough will spread during the baking process so be sure to leave ample room between balls of dough.

Bake for 11 to 15 minutes, or until the cookies reach your preferred level of done-ness. Chewy cookies will need 10 to 11 minutes on the dot and crispier cookies will require 13 to 15.

Remove cookies from the oven and allow them to cool for a few minutes before transferring them to a wire rack and digging in! If you go after them right away, they will fall apart easily, so for best results, wait for at least 15 minutes before diving in.

How Do You Make Chocolate Chip Cookies Vegan And Sugar

Well, as I mentioned this recipe did take some development. Its one thing baking without animal products , but then omitting sugar is a whole other thing. But it is doable!

Sugar has a lot to do with the makeup of the whole cookie, as do all the ingredients. Sugar helps keep baked goods moist, it helps to brown, and it provides structure and leavens.

So I had to find a good sugar substitute and the right quantity. While the sugar substitute I used is good and Im really happy overall with my cookies, these arent EXACTLY like traditional chocolate chip cookies. They are slightly softer and dont crisp up as much around the edges due to the lack of actual sugar.

In place of sugar I chose to use Natvia. Its actually what I use most often when I bake as it works in most of the recipes I have tried. Its a natural sweetener made from a mix of stevia and erythritol. Its a little bit sweeter than sugar, so when I use it I use a bit less than what I would sugar.

To ensure these chocolate chip cookies were sugar-free, I of course also needed to use sugar-free chocolate chips. But because I also made these vegan, I needed sugar-free AND dairy-free chocolate chips. Luckily there are a few on the market these days. I used Healtheries 99% sugar free dark chocolate baking bits. Ive used these a lot in the past and I really like them. Although be warned they arent cheap.

Swapping Regular Sugar For The Sugar Alcohol Erythritol Can Help Make Your Cookie More Diabetes

    Diabetic

Tis the season for all things sweet, and for many people, the go-to indulgence is, you guessed it, cookies.

For people with type 2 diabetes, this time of year can present challenges on the sweets front you want to enjoy the dessert table at your company party or dessert on Christmas Day, but you dont want to risk spiking your blood sugar.

Rest assured: Living with diabetes doesnt mean you have to avoid all holiday treats you just have to get a little creative during your homemade cookie prep.

The traditional cookie recipe calls for ingredients that tend to be off-limits on a diabetes meal plan: refined flour and added sugar. But the good news is there are lower-carb, higher-fiber alternatives that dont compromise on taste!

As a registered dietitian, certified diabetes educator, and recipe developer myself, I focus on finding ways to adjust my favorite desserts to do just that because whats the point in eating a bland cookie? You can see some of my creations on my website, such as my Chocolate Chip Prune Cookies and my Raspberry Yogurt Breakfast Cookies.

Whats the trick to making recipe swaps work? You have to look for ingredients that maintain the sweet taste and texture of the food. For instance, pureed fruit, such as prunes and bananas, can make the perfect replacement for added sugar. All-purpose flour can be swapped with lower-carb, higher-protein options such as almond flour, coconut flour, or whole-wheat pastry flour.
