First, you add your almond flour, egg, cream, butter, vanilla extract and granulated sweetener into a bowl.
You can use coconut oil if you want a dairy free keto dessert!
To my UK readers – if you use ground almonds, add an extra couple of tablespoons as ground almonds tend to be coarser than almond flour.
You can mix everything with a fork in a large bowl – it comes together really easily. Let the batter sit for a few minutes to let the flour absorb the moisture.

How To Make Sugar
These cookies are so easy to whip up, you can make them any time youre craving a little something sweet!
Step 1: Preheat your oven to 325F and line a baking tray with baking paper.
Step 2: Add the erythritol to a high-speed blender and process until powdered. If the sweetener is already powdered, you can skip this step.
Step 3: In a large bowl, mix together the butter and powdered sweetener until the sweetener is almost completely dissolved.
Step 4: Add in the ground flax, water, baking soda, and almond flour. Stir until well-combined.
Step 5: Gently fold in the chocolate chips until they are evenly distributed throughout the dough.
Step 6: Using about 1 tbsp of dough at a time, form the dough into cookies and place on a baking tray lined with parchment paper. You should end up with 8 cookies.
Step 7: Bake for 15-20 minutes at 325F until they just start to brown and become golden.
Step 8: Remove from the oven and allow to cool for 10 minutes on the baking tray.

Add the butter and sugar to a stand mixer and beat until combined and fluffy .
Use a rubber spatula to scrape the sides of the bowl and beat in the egg and vanilla extract.
Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat on high speed until everything is incorporated and a sticky dough forms. Beat in the chocolate chips.
Use the rubber spatula to scrape the sides and bottom of the bowl again to ensure all of the ingredients are mixed together very well. Refrigerate the dough for at least 1 hour before baking.
When youre ready to bake, preheat the oven to 350 degrees F and line a large cookie sheet with parchment paper.
Measure out cup of the dough and place it on the baking sheet. You can also use a cookie scoop if you own one. Repeat for remaining cookie dough . Note that the dough will spread during the baking process so be sure to leave ample room between balls of dough.
Bake for 11 to 15 minutes, or until the cookies reach your preferred level of done-ness. Chewy cookies will need 10 to 11 minutes on the dot and crispier cookies will require 13 to 15.
Remove cookies from the oven and allow them to cool for a few minutes before transferring them to a wire rack and digging in! If you go after them right away, they will fall apart easily, so for best results, wait for at least 15 minutes before diving in.

How Do You Make Chocolate Chip Cookies Vegan And Sugar
Well, as I mentioned this recipe did take some development. Its one thing baking without animal products , but then omitting sugar is a whole other thing. But it is doable!
Sugar has a lot to do with the makeup of the whole cookie, as do all the ingredients. Sugar helps keep baked goods moist, it helps to brown, and it provides structure and leavens.
So I had to find a good sugar substitute and the right quantity. While the sugar substitute I used is good and Im really happy overall with my cookies, these arent EXACTLY like traditional chocolate chip cookies. They are slightly softer and dont crisp up as much around the edges due to the lack of actual sugar.
In place of sugar I chose to use Natvia. Its actually what I use most often when I bake as it works in most of the recipes I have tried. Its a natural sweetener made from a mix of stevia and erythritol. Its a little bit sweeter than sugar, so when I use it I use a bit less than what I would sugar.
To ensure these chocolate chip cookies were sugar-free, I of course also needed to use sugar-free chocolate chips. But because I also made these vegan, I needed sugar-free AND dairy-free chocolate chips. Luckily there are a few on the market these days. I used Healtheries 99% sugar free dark chocolate baking bits. Ive used these a lot in the past and I really like them. Although be warned they arent cheap.
