Chocolate Graham Crackers Recipe

The way of preparations easy

Prep time

  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 3/4 teaspoon pure vanilla extract
  • 2 tablespoons coconut oil
  • Dark chocolate for the glaze

Instructions on how to make Keto chocolate graham crackers

  • Preheat oven 325 degrees F.
  • In a bowl of food processor, pulse, all dry ingredients.
  • Add coconut oil, egg whites, and vanilla to dry mixture.
  • Stir with wooden spoon until dough forms.
  • Taste for sweetness and adjust if needed.
  • Form dough into ball and place in the center of silicon mat .
  • Place the paper on top of the dough and roll out dough until about 1/8th of an inch thick.
  • Make sure dough is even thickness.
  • The dough will be about 8X10 inches .
  • Use your favorite cookie cutter and cut the dough into squares .
  • Transfer mat to a cookie sheet and bake for 10-12 minutes.
  • Break apart.

What Gluten Free Baking Blend Is Best

Everyone has their own preferences for gluten free flours, but I like to use Bobâs Red Mill 1-to-1 Baking Blend. I have really excellent results using this blend in my recipes, and I find that it replicates traditional all-purpose flour very well.

When working with gluten free flours, be sure to use a spoon to scoop the flour into your measuring cup, rather than scooping in to the bag with the cup. Scooping with give you too much flour, and your dough will be thick and dry.

How To Handle This Graham Cracker Dough When Raw

The dough rolls out really easily. Just be mindful not to roll it too thin or they will burn a bit in the oven, and then crumble. The dough should not be refrigerated at all, which is likely to dry it out.

If you want to bake some of it later, then by all means refrigerate the dough , and when youre getting ready to use it let it sit out until it comes to room temperature. It wont take long to soften up enough to be workable.

    Which Graham Cracker Crust Is Better Baked Or No

    The crust in the photo at the top of this post is the baked graham cracker crust. Its very stable, even at warm room temperature, although a no-bake graham cracker crust is most stable when chilled.

    I like having the option of using a baked graham cracker crust in desserts that need some extra stability from the crust. Thats often the case with no-bake recipes like our smores pies, but it can come in handy when youre making something quite small, like our cheesecake cookie cups.

    A no-bake graham cracker crust simply will not work in a standard miniature muffin tin . It will fall apart as you try to get each crust out of its well of the pan.

    The smallest size well from which I have ever successfully removed an intact no bake cookie crust is 6 well cake panel pan from USA Pans . And even then, youll need to add an unbleached parchment paper sling to the bottomand dont chill the crusts too much or they will become brittle and crack when you try to remove them.

    The best feature of the baked crust is its flexibility. Because its so stable, you can use it to make very small confections, and even lift it right out of a pie plate after its been baked and cooled.

    Then, fill the crust with something warm or cold. Just be sure not to overbake the baked crust and it will cut easily with a fork when you serve it.

    Need A Chocolate Fix Try A Chocolate Graham Cracker

  • 1 1/2 cups any combination of gluten free flours
  • 1/2 cup organic cocoa powder
  • 1/2 cup organic cane sugar
  • 1/2 tsp. baking soda
  • 1/2 cup organic palm shortening and/or coconut oil
  • 6 Tbsp. honey
  • Heat the oven to 350*F. Cut three pieces of parchment paper the size of baking sheets.
  • In a large bowl, cream the shortening/oil and sugar.
  • Add the cocoa powder. Blend well .
  • Add the flour, baking soda, salt and honey. Blend well.
  • Using a spoon or your hands, check if the dough is moist enough/holds together well. If the dough is still crumbly slowly add water, 1 Tbsp. at a time until dough will hold together when squeezed with your hand.
  • Place 1/2 of the dough onto one of the pieces of parchment paper. Place another layer of parchment paper over top
  • Roll the dough between the parchment paper until it is 1/4 thick. Remove top paper.
  • Using a pizza cutter or a knife, cut the dough into squares.
  • Place the cookies onto a baking sheet.
  • Repeat this process for the second half of the dough.
  • Bake the cookies at 350 for about 15 minutes.
  • After removing the cookies from the oven, run the pizza cutter/knife along the cut lines again.
  • Allow the cookies to cool completely. They will crisp as they cool.
  • Store in an air tight container in the cupboard or in the freezer for long term storage.

    What I refer to as docking the shaped, raw graham cracker dough has two steps. One is creating a seam in the center of each rectangle that goes about halfway through. The other is making holes that go all the way through the dough.

    The seam in the center is mostly for authenticity, like real graham crackers have. Its clearly not necessary, but does make it easier to break the crackers in half neatly.

    I use a pastry wheel, but you can use a knife or pizza wheel. Just dont cut all the way through or youll have two smaller rectangles of dough.

    The holes in the dough are different. Theyre helpful in allowing steam to escape during baking so the crackers dont puff up, but rather dry out and become crispy as they cool.

    Usually the answer is no, unless specified otherwise. Conventional graham crackers are made with wheat flour. In fact graham flour is a type of wheat flour that’s full of hearty wheat germ and wheat bran.

    In this case, if you use gluten-free graham crackers, the crust will be gluten-free! Do take care to source certified gluten-free ingredients: gluten-free graham crackers if using store-bought, gluten-free flours and ingredients if making your own.

    How To Make Graham Cracker Crust Dairy

    If you also follow a dairy-free diet, you can make a gluten-free graham cracker crust without the dairy by swapping out butter for a vegan butter option or coconut oil.
