Um . . . what even is healthy? Okay, Im joking, but actually its good to step back now and again to think about what healthy means.
Healthy basically boils down to two things:
1.Calorie in versus calorie out. Balance. If you are eating fewer calories per day than you use, your body is still getting the daily calories it needs by burning excess fat, assuming you have excess fat. Otherwise, you are starving your body.
Bottom line, if your body isnt getting your necessary calories somehow, youre not eating healthy.
2. High-quality nutrients. Food doesnt just provide energy , it also provides the building blocks of life . Variety matters. I dont care how healthy kale is, eat nothing but kale every day and you will not get all your nutrients.
Bottom line, eating a wide variety of foods is the only way to get all those wonderful macro and micro nutrients.
So? The skinny on Skinny Oatmeal Cookies? Are they healthy?
Folks, the good news is homemade oatmeal cookies can be a part of a healthy diet! The bad news is they have to be a small part of a healthy diet.
Like I said above, these cookies have nutrients aplenty. But with all those nutrients comes a lot of calories, all inside a little cookie. When big calories come in small packages, you dont feel full fast and that can lead to excess eating. One of the best things about this better-option cookie recipe is that it only makes 12-15 cookies, which helps to keep portions under control.
First Off What Is Oat Flour
These cookies use oats, which we blend up into a flour consistency, as the base for this recipe. Most healthy cookies call for flours youll likely have to buy online or at a health food store, so it was important to me that this recipe used something that most people have old-fashioned or quick oats. Either will work in this recipe steel-cut oats are the only oats that dont work.
The oats are blended up before being added to the batter, and they resemble flour and serve the same function. Before you get overwhelmed, making oat flour takes mere minutes, its ridiculously easy!
How to make powdered oats: Add the old-fashioned oats or quick oats to a food processor or small blender jar. Pulse or blend the oats until they are ground into a powder-like consistency that resembles flour. Stir the oats around to be sure that all the oats have been finely ground and there arent any whole oats left.
Do I Have To Use Coconut Oil

The Ingredients And Substitutions
- Almond flour Blanched almond flour gives the chocolate chip cookies a light texture. Its also grain free, so keeps the cookies low carb, too. Avoid using almond meal, as it will make the cookies denser.
- Arrowroot starch Works with the almond flour to keep the cookies soft and chewy, without falling apart or needing eggs. You can also use corn starch if youd like.
- Baking powder Gives the cookies some rise and width.
- Coconut oil Replaces any need for butter, while keeping the cookies buttery and soft.
- Maple syrup Gives sweetness to the cookies, without being overpowering. You can replace this with agave nectar.
- Vanilla extract A MUST for any good cookie recipe.
- Milk of choice I used unsweetened almond milk, but any milk of choice will work.
- Chocolate Chips Use a mix of mini chocolate chips and standard chocolate chips to ensure there are mouthfuls in every bite. I used dairy free ones but use whichever you prefer!
Eat This Not That Tip
You can change up the chips by subbing in white or milk chocolate chips, or even peanut butter chips. A handful of dark raisins or a half-cup of shredded coconut bring sweetness of a different, natural variety. Oats are one of the healthiest whole grains, and that includes quick oats, one of the ingredients in these cookies. Quick oats are smaller, drier, flakier, and more processed than old fashioned rolled oats. Unless youre in a pinch, use quick oats for this recipe. They absorb moisture and take on a softer, cookie-er texture than old fashioned rolled oats.

I have not tried this recipe with another flour. All-purpose or oat flour may work. I would strongly advise against using coconut flour, as it has a very different absorbancy and would require all different measurements/ingredients.

The same amount of regular granulated sugar, coconut sugar or maple syrup should work just fine .

I swapped whole wheat flour for all-purpose, which is undetectable in the final product. I also substituted coconut sugar for brown sugar, which is less refined . I experimented with oils other than canola, which is highly processed and high in omega-6s.
I also found a chilling time shortcut. If you scoop the dough onto the sheets and then chill it, 30 minutes in the freezer works just as well as their 24-hour recommendation. That way, the recipe works with coconut oil, which solidifies at cool temperatures.

I should mention that these Healthy Chocolate Chip Cookies are vegan, gluten-free, grain free, Paleo, and made without refined sugar. Seriously!
- 2 cups finely sifted almond flour
- 1/2 cup almond butter
- 1/2 cup stevia-sweetened dark chocolate chips*
Dont have almond butter? Go ahead and use peanut butter.
Im pretty sure honey would work in place of the maple syrup as well.
The one thing you cant sub out is the almond flour or almond meal. That needs to stay. For best results, use the finely sifted kind and not the coarse kind. Most grocery stores carry both.

- You can make the dough ahead of time if you prefer. Store it in a storage bag, with as much air removed as possible, in the fridge for up to about 5 days. Let sit at room temperature for about 20-30 minutes before rolling into balls so it softens.
- Gluten-free: Use gluten-free flour blend instead of the all purpose flour.
- Use all chocolate chips or a mix of chocolate chips and dried fruit.
- If you dont love coconut, you can use additional dried fruit or chocolate chips.

For todays skinny cookie recipe, this is not going to be a problem for you at all! These are low fat cookies. There are only 2 tablespoons of butter in the whole batch. You are not going to have a problem with these cookies baking flat! Just make sure you follow the instructions to chill the dough before baking.

If youre expecting this recipe to taste like regular chocolate chip cookies, Ill tell you right here, this is not the recipe. Theres a reason loads of butter, tons of sugar, and even more chocolate make such a compellingly delicious treat. When you take all that out, you can still have delicious cookies, but theyre going to taste pretty different.
Texture-wise: These cookies are very crunchy with a sandy-like texture. Sandy textured cookies are made by using less sugar, less liquid, and higher fat content. We use coconut oil as the fat in this recipe. These cookies quickly disintegrate, practically melting away in your mouth in one bite. These cookies are more dry than regular cookies more of a crunchy cookie as opposed to soft and chewy.
Flavor-wise: Fresh out of the oven, these cookies taste like crumbly, chewy oat bites with pools of melted chocolate. If you love oats, you will enjoy these cookies. If you arent a big oat fan, this is probably not the recipe for you! These also have a strong dark chocolate flavor from the dark chocolate chips. Finally, these arent very sweet most of the sweetness comes from the chocolate chips. If youd like them to be slightly sweeter, the brown sugar can be increased.

Have you ever dreamt of eating a cookie thats actually good for you? Well, your dream is now a reality with this life-changing chocolate chip cookie recipe. These simple cookies are flourless and refined sugar-free, using tahini as their base to create a rich treat with a welcome nutty taste and bone-building calcium. A sprinkle of coarse salt before baking takes these already-epic cookies to another level. And, not only do they taste sensational, theyre also stunningly beautiful, with their rustic crinkles and bursts of dark chocolate. We think you may never go back to the standard chocolate chip cookie again.
Preheat oven to 350ºF. Line two large baking sheets with parchment paper.
In a large bowl, whisk to combine tahini and coconut sugar. Whisk in egg, followed by vanilla and baking soda. With a spatula, fold in chocolate until evenly incorporated.
Scoop 1 Tbsp-sized portions of cookie dough and add to prepared baking sheet, leaving about 3-inches of space around each cookie, as they will spread quite a bit. Do not flatten cookies. Sprinkle a small amount of coarse sea salt on top of each cookie.
