Gather all of your cookie ingredients, and preheat the oven to 380 degrees Fahrenheit.

Combine the oat flour, baking soda, salt, sweetener, and chocolate chips in a large mixing bowl, and stir well to ensure everything is evenly mixed.

Add in the pure vanilla extract, vegetable or coconut oil, and milk of choice . Form the dough into one big ball, then break off into smaller pieces and roll into cookie dough balls.

For soft chocolate chip cookies, refrigerate until chilled . For crispier cookies, you can bake them right away.

Place the cookies onto a cookie tray, and bake on the ovens center rack for nine minutes. Then remove from the heat when they are still a little undercooked.

Let the healthy chocolate chip oatmeal cookies sit for ten to fifteen minutes before handling, because they will firm up as they cool down.

For todays skinny cookie recipe, this is not going to be a problem for you at all! These are low fat cookies. There are only 2 tablespoons of butter in the whole batch. You are not going to have a problem with these cookies baking flat! Just make sure you follow the instructions to chill the dough before baking.

How To Make These Healthier Oatmeal Chocolate Chip Cookies

Now for the best part: baking! Heres a simple overview of what to do and what to watch out for.

1.Preheat the oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.

2.Mix dry ingredients together: oats, flour, baking powder, cinnamon, and salt. Make sure you spoon and level your flour. I always do it with two measuring cups. Scoop with one cup, dump it in the one you need, then level off with the top of the measuring cup.

3.In a separate bowl, melt the butter. Whisk in the vanilla, then the egg. Whisk in the honey.

4.Add the dry ingredients to the wet ingredients and stir until it has just come together. Dont overdo it, over mixing makes for tough cookies.

5.Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.

The chocolate chips are divided: half in the dough, half jammed into the warm cookies after baking for maximum showiness. If showiness isnt your thing today, own it. Toss all the chips in the dough with reckless abandon.

6.Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes. Dont skip this step! Yes, were modern humans. Yes, were pressed for time. Theres a reason loads of butter, tons of sugar, and even more chocolate make such a compellingly delicious treat. When you take all that out, you can still have delicious cookies, but theyre going to taste pretty different.

Texture-wise: These cookies are very crunchy with a sandy-like texture. Sandy textured cookies are made by using less sugar, less liquid, and higher fat content. We use coconut oil as the fat in this recipe. These cookies quickly disintegrate, practically melting away in your mouth in one bite. These cookies are more dry than regular cookies more of a crunchy cookie as opposed to soft and chewy.

Flavor-wise: Fresh out of the oven, these cookies taste like crumbly, chewy oat bites with pools of melted chocolate. If you love oats, you will enjoy these cookies. If you arent a big oat fan, this is probably not the recipe for you! These also have a strong dark chocolate flavor from the dark chocolate chips. Finally, these arent very sweet most of the sweetness comes from the chocolate chips. If youd like them to be slightly sweeter, the brown sugar can be increased.

I highly recommend topping the cookies with extra chocolate chips and a pinch of sea salt flakes for the perfect crunchy, salty and sweet treat!

  • Almond flour Blanched almond flour gives the chocolate chip cookies a light texture. Its also grain free, so keeps the cookies low carb, too. Avoid using almond meal, as it will make the cookies denser.
  • Arrowroot starch Works with the almond flour to keep the cookies soft and chewy, without falling apart or needing eggs. You can also use corn starch if youd like.
  • Baking powder Gives the cookies some rise and width.
  • Coconut oil Replaces any need for butter, while keeping the cookies buttery and soft.
  • Maple syrup Gives sweetness to the cookies, without being overpowering. You can replace this with agave nectar.
  • Vanilla extract A MUST for any good cookie recipe.
  • Milk of choice I used unsweetened almond milk, but any milk of choice will work.
  • Chocolate Chips Use a mix of mini chocolate chips and standard chocolate chips to ensure there are mouthfuls in every bite. I used dairy free ones but use whichever you prefer!

Why Are My Cookies Flat

Here are the 4 most common reasons why cookies spread so much.

  • The Butter Is Too Soft: Butter is the foundation of delectable Healthy Chocolate Chip Cookies. The butter should be left out at room temperature for 30 minutes to an hour until its pliable but still cool to the touch. . When creamed with sugar, room temperature butter has just the right consistency to incorporate air. Because of the trapped air pockets, the Healthy Chocolate Chip Cookies rise and become fluffy. If the butter is too warm, it will not incorporate enough air, resulting in a lower rise in your cookies. Furthermore, butter that is warmer than room temperature melts in the oven in an instant, encouraging the dough to spread quickly with it. A quick fix is to chill the Dough. Refrigerate the remaining dough for one to two hours or until it feels firm to the touch. This chills the butter, preventing it from spreading too quickly in the oven.     • DO NOT overbake the cookies! Again, these cookies are eggless, so if they are a little undercooked, its no issue.
    • If your coconut oil and syrup mixture is still warm, let the cookie dough sit for a little bit, before folding through the chocolate chips- we dont want the chocolate chips to melt!
    • Avoid overmixing the batter- overmixing will make the cookies more prone to falling apart.

    Keep your cookies in either a Ziploc bag or a Tupperware container. They can stay at room temperature or be placed in the fridge and enjoyed for about a week. As always, you can freeze and enjoy within 3 months!

    I have not tried this recipe with another flour. All-purpose or oat flour may work. I would strongly advise against using coconut flour, as it has a very different absorbancy and would require all different measurements/ingredients.

    Can I use another sweetener?

    The same amount of regular granulated sugar, coconut sugar or maple syrup should work just fine .
