No Bake Cheesecake Vs Classic Cheesecake:

No bake cheesecakes and classic cheesecakes are both equally delicious and both make up 95% of my dreams. So you may be wondering what to expect out of a no bake cheesecake vs a baked cheesecake. Oooooor you may not be, but Im going to tell you either way lol

No bake cheesecake has a noticeably lighter texture. The whipped heavy cream makes for an airier texture thats almost mousse like.

We have a lot of the classic ingredients for any good cheesecake in the no bake version. But no bake cheesecake doesnt have any eggs which makes it a great option for anyone whos allergic!

Aside from the ingredient and textural differences, the flavor is nearly identical. No bake cheesecake does have a slightly cheesier flavor because of the no bake aspect, which usually dims the flavor in a classic cheesecake.

How To Make No

Ingredients youll need:

  • unsalted butter

For the ganache:

  • unsalted butter

To make this chocolate cheesecake, simply stir together the Oreo crumbs and melted butter until all the crumbs are moist. Press the mixture into a greased 9 springform pan and refrigerate whilst preparing the cheesecake.

Using a handheld or stand mixer, whip the heavy cream on high speed until it starts to thicken. Add the icing sugar and vanilla and whip until stiff peeks form.

In a separate bowl, whisk together the cream cheese and sugar until smooth and combined. Add the cooled melted chocolate, and mix until combined. Gently fold in the whipped cream.

TIP: If the chocolate happens to harden against the cool mixture, microwave the mixture to warm up slightly, then mix until smooth and combined.

Spread the mixture evenly over the cooled crust and smooth out the top. Refrigerate for at least 6 hours preferably overnight.

For the chocolate ganache, microwave the chocolate and butter together in 30 second intervals, stirring after each one, until melted and smooth. Leave to cool for 5 10 minutes, then spread over the cheesecake.

Allow to set before slicing and serving.

How To Make The No Bake Chocolate Cheesecake Base

Lightly grease & line the base and sides of the springform pan and set it to one side until needed.

Tip the Oreos, including the fillings, into the food processor and pulse until they become fine crumbs. Then melt the butter in a small bowl in the microwave in 10 second intervals. Pour this into the Oreo crumbs and blitz again briefly until it starts to clump together.

Tip the crumb mixture into the prepared tin and press into the base and sides of the lined pan. I like to use a metal teaspoon to do this.

Pop it into the freezer to firm up while we get on with the filling.

How To Thaw Your Frozen Cheesecake

If you froze your whole cheesecake or individual cheesecake slices, you need to know how to properly thaw it.

Frozen cheesecake is best if its allowed to sit in the refrigerator overnight to thaw. Remove the aluminum foil, but be sure to leave it in its plastic wrap so that it doesnt absorb odors and flavors from other foods.

If you need your frozen cheesecake to thaw more quickly, you can allow it to sit on the counter for two to four hours to defrost. When defrosting your cheesecake, be sure to remove the foil, but leave it in the plastic wrap.

Are you in a bind and need your cheesecake thawed ASAP? You can use the microwave to thaw your frozen cheesecake, but you have to be super careful to do this.

  • Remove the foil and plastic wrap.
  • Thaw in the microwave in 20-second intervals, checking your cheesecake after each 20-second period.

    Which Chocolate Is Best For The Filling

    Use quality chocolate bars from a chocolate brand you love. I don’t recommend chocolate with less than 45% or more than 60% cacao as the cheesecake would be either too sweet or not sweet at all. The recipe is designed with 50% semi-sweet chocolate and my favorite chocolate brands are Ghirardelli, Guittard and Lindt.

    Note: Do not use chocolate chips or the filling may become grainy and less creamy.

    • Stir in 1 teaspoon of vanilla extract or vanilla bean paste if you want to go extra fancy.
    • In a bowl whip the double cream / heavy cream until thick and has soft peaks.
    • Sieve the icing sugar into the cream cheese.
    • Combine the cream cheese and double cream until combined. Dont over mix.
    • Spoon the mixture into the cake tin and level off. Place it in the fridge for at least an hour.

    How Do I Make A No

    • In a large mixing bowl, beat the cream cheese for 1 minute or until smooth.
    • Add the confectioners sugar and beat until well blended.
    • Add the vanilla extract and mix again until well blended.
    • Melt the chocolate over a double boiler. Let it cool slightly before adding it to the cream cheese mixture.
    • With the mixer on a slow speed, add the melted chocolate to the cream cheese mixture, pouring it slowly. Mix until well blended.
    • In a clean bowl whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the chocolate cream cheese mixture. Mix gently until fully blended.
    • Refrigerate the cheesecake mixture while making the crust.
    • In a medium bowl, mix together the Biscoff cookie crumbs, cocoa powder, and melted butter. Stir until the ingredients are fully combined.
