How Long Does Chocolate Covered Fruit Last

Chocolate Covered Fruit can be made up to a day ahead of time. At a minimum, make them a couple of hours ahead of serving so they have time to chill and for the chocolate to harden.

Store any leftovers in the refrigerator with a loose sheet of wax paper up to 2 days after making. Any longer than 2 days and the fruit will start to go bad.

How To Melt Chocolate On The Stove

You can either use a double boiler which is essentially a bowl on top of a pot which is filled with a little water. The pot I mean, not the bowl. Bring the water to a boil and put the bowl which contains only chocolate chunks on top. Its important that the bowl does not touch the water. The steam alone should be the source of heat. Keep the pot with bowl on top on the hot stove but reduce heat to low to maintain a bare simmer.

Stir the chocolate constantly. The stirring is important to avoid the chocolate from getting too hot in both cases, microwave and stove-top method. If the chocolate gets too hot it will curdle and there is no way to safe it. DO NOT overheat and DO NOT stop stirring. Its important that you dont walk away and keep an eye on your chocolate at all times.

No. The chocolate covered strawberries have to harden in the fridge, not the freezer. If you risk the strawberries to freeze they will be rock hard and you wont be able to give them a bite. PLUS, once they thaw they get mushy and release all their water into the chocolate and thats not a nice thing to look at and the taste suffers from it, too.

We will use Bakers chocolate when we are making fewer strawberries or when we really want to impress guests. Its a tid more expensive but has a softer coating and tastes more gourmet.

Guittard Chocolate Chips arent too expensive, and the chocolate is incredible!! Whether you like dark, milk chocolate or semi-sweet chocolate, these chips are a great option. We have seen that chocolate chips burn more easily so you need to be extra careful when melting.

Wash and thoroughly dry the fruit then melt the chocolate in the microwave starting with 30 seconds at full power.

Stir the chocolate after 30 seconds then microwave a few more seconds, up to 30 seconds. Melted wafers retain their shape until you stir them. Dont overheat the chocolate or it will seize.

To dip strawberries, hold the stem then dip into the chocolate almost to the top. Lift, give it a small swirl then transfer to a parchment paper lined baking sheet and coat with desired toppings . Repeat until all the fruit is covered in chocolate.

For chocolate dipped bananas, cover the entire banana slice to keep it from turning brown. You can use a small fork or toothpick to hold the banana slice.

Finish dipping all the fruit then transfer the tray to the refrigerator for 15-30 minutes to chill and harden the chocolate.

CLEAN STRAWBERRIES. To begin, rinse your berries. Place them on a paper towel to dry. I usually do this the morning of when I will be making them.

NOTE: Making sure the strawberries are completely dry is key since chocolate will not stick to water.

PREPARE BAKING SHEET. Line a baking sheet or pan with parchment paper. Place strawberries right next to your pan. Also, place a hot pad next to the pan for when the chocolate is melted.

NOTE: Sometimes the parchment paper doesnt stay very well and starts to roll back up. To stop this I will spray a little cooking spray on the pan and then put on the parchment paper. Works like a charm!

MELT CHOCOLATE. Melt your chocolate. Melt on LOW heat in the saucepan, stirring CONSTANTLY with a rubber spatula. Yes, it may take at least 5 minutes and your hand gets tired, but your candy will melt perfectly. When chocolate is completely smooth, remove from heat.

I used chocolate specifically made for dipping, like this one carried by most grocery stores. Local specialty markets may also package their own chocolate for covering fruit.
