These oversized, coffee-table books reside in a prominent place on my bookshelf. I have leafed through them all, savoring the recipes, and lusting after each and every magnificent dish photographed so dreamily.

But Ive yet to cook from any of them. Maybe Ive felt unworthy. Maybe Ive lacked the equipment necessary. And maybe Ive lacked the time for some of the rather involved dishes that my husband joked hed have to take days off from work to help me pull off.

That is, until now.

Until a promo brochure for the upcoming Ad Hoc At Home book arrived in my mail, and I fairly ran to the kitchen to start pulling measuring spoons and bowls out of my cabinets.

Ive had the pleasure of eating at Ad Hoc in Yountville a couple of times. Ive always been won over by the impeccable quality of the seasonal, family-style food served at this casual eatery. Its comfort food done with utmost fun and finesse.

Salmon tartare cornets Ill leave to the French Laundry staff to construct. A Bouchon recipe for French onion soup that requires a half day to caramelize onions ever so slowly makes my eyes glaze over. Sous vide anything makes me start to tremble.

But chocolate chip cookies? OK, this I can do.

Being the cookie fiend that I am, though, it was the recipe included in full for chocolate chip cookies that got me pumped up.

  • Ive gone ahead and reduced the sugar in the recipe because I found them just a tad too sweet.

I hate to ruin your childhood, but no these cookies were nothing special . The batter didn’t spread out and they ended up looking lumpy and sad. The flavor was mild and the chocolate and nuts didn’t shine through. I would never turn down a Toll House cookie but I wouldn’t recommend using the recipe either. Compared with the others, this cookie just didn’t do it for me.

6. Using about two level tablespoons per cookie, shape dough into balls. Arrange eight cookies on each pan, leaving about two inches between them, because the dough will spread.

7. Bake for twelve minutes, or until the tops are no longer shiny, switching the position and rotating pans halfway through baking.

LOL NOPE and from now on, let’s not call these cookies . They were dry, sandy, and all I could taste was coconut oil. I understand that she wanted to make a ~healthier~ version of the classic , but that doesn’t mean they should be SO dry that they literally exfoliate my mouth as I chew. When using coconut flour, you have to use A LOT of eggs to counteract how dry it can make things, and it seems that Kourtney may have missed that memo. But hey, she is pretty busy these days. *sips my Fit Tea*

  • 3/4tea spoonbaking soda
  • ½tea spoon salt

    Thomas Kellers Chocolate Chip Cookie recipe is from Ad Hoc at Home. Ill have to update the post when I try other recipes from the book, but so far Ive only made the chocolate chip cookies and they are as good as youd expect given the source.

    Over the years Ive had issues with these cookies coming out a little too thin, so Ive learned to use slightly heavier per cup of flour and be mindful of which brands of chocolate to use since some higher cocoa butter chocolates cause more spreading. Ive also made Thomas Kellers Chocolate Chip Cookies with chocolate chips instead of chunks.

    The original Thomas Keller Chocolate Chip Cookie recipe calls for molasses sugar, but allows for regular brown sugar as a substitution since molasses sugar isnt always easy to find. You can use light, dark or a mixture of both. I like using a mixture. As for the molasses sugar, if you want to order some the most popular brand seems to be Billingtons. Im not ready to order $30 worth of brown sugar from Amazon quite yet. Plus I think I tried it at one time and felt like it made the cookies too molasses-y.

    Definitely! These cookies were damn good! The two types of chocolate balanced each other out and made these cookies ridiculously indulgent. The texture was fudgy and soft as if a sugar cookie and a brownie had a baby. The dough spread quite a bit , but the flavor was out of this world.

    Eh, don’t rush. The cookies looked similar to Thomas Keller’s, but they didn’t have nearly as much flavor.
